Kimpira Gobo is a side dish made with Braised Burdock roots (an earthy root vegetable) . Burdock, also known as gobo in Japanese. This is a long slender root vegetable with rusty brown skin and grayish-white flesh. Although burdock is little known in the United States, it has been an important and commonly used vegetable in Japanese cuisine for centuries. In Japan, burdock is often pickled or used in such traditional dishes as kimpira gobo. For this dish, carrots and burdock are cut into matchsticks, stir-fried together, and then braised in a mixture of mirin, sugar and soy sauce with hot peppers and sesame seeds.

sarap naman.. healthy.. ganyan din mostly ang sineserve ko, easy and yet healthy. Kaso kakatamad lang gumawa ng kimpira gobo pero very healthy daw yun..
